Zucchini Patties
Mix together 2 cups grated zucchini (liquid squeezed out), 1 beaten egg, 2 tablespoons diced onion, 4 tablespoons bread crumbs and a pinch of salt. Shape into four patties and fry in an oiled skillet until brown on both sides and heated through. Top with a slice of your favorite cheese, if desired, and serve as an alternative to traditional beef burgers.
