Don’t know what to do with those over-sized zucchini? Farmer Steve Tiwald says: “...a lot of people going through the [CSA pickup] line have never heard of zucchini boats, so I tell them about this delightful way to enjoy the large zucchini squashes:

Cut the zucchini from north pole to south pole, scoop out the seeds, and replace them with fillings of choice, such as cheese, rice, tomatoes, sausage, ground beef, and/or veggies. Then bake at 350 degrees F. until ready.
