Zucchini Blondies

1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup brown sugar
1/3 cup butter
2 eggs
1 teaspoon vanilla
1 cup shredded and squeezed-dry zucchini
1/2 cup semi-sweet chocolate chips
1/2 cup coarsely chopped walnuts (optional)

Lightly grease an 8-inch square pan. In a bowl, mix the flour, baking powder, baking soda and salt. In another bowl, mash together the brown sugar and butter until light and fluffy. Beat eggs and vanilla into the sugar mixture. Gradually combine flour mixture with sugar mixture and then stir in zucchini, chocolate chips and walnuts. Pour batter into the pan. Bake at 350 degrees for 30 to 40 minutes. (Check after 25 minutes. If top is browned, cover loosely with tin foil and continue to bake until done.) Cool completely before serving.
