Kid-Friendly Zucchini Fritters

Recipe easily doubles for a bigger crowd or they freeze well too... And thanks for all the great recipes in the newsletters...I try at least 3 or 4 every week!"
Editor’s note: Try this recipe with any combination of summer squash. Also, if you use a non-stick griddle, these can be made without the butter, just use a very small amount of cooking spray.
5 tablespoons Bisquick or similar baking mix
1/2 cup grated/shredded Parmesan cheese
1/4 teaspoons salt
1/8 teaspoon ground black pepper
2 eggs
2 tablespoons butter
2 teaspoons dried onion flakes
2 cups grated/shredded zucchini
Blend baking mix, cheese, salt, pepper and onion flakes in one bowl. Add eggs, and grated zucchini to flour mixture; stir to make a batter. Heat griddle on medium-high heat. Add butter and heat until melted. When griddle is hot, pour batter into pancakes and fry about 3 minutes each side. Serve hot topped with apple sauce and sour cream or plain yogurt.
Makes 8 to 10 pancakes.
