From the "Kid's Corner" - Zucchini Boats
Kids can help make this fun dish!
Cut zucchini in half lengthwise and scoop out pulpy middle. Pre-bake or steam upright in large pot to tenderize, but not fully cook. Stuff with a favorite mixture, such as pizza fixings. Place on cookie sheet and bake until heated through and fully tender.
