From the "Kids' Corner" - Easy Zucchini Boats

If your squash is on the large size, make zucchini boats! Kids can help.

Cut the squash in half lengthwise and scoop out the pulpy middle.

Pre-bake or steam upright in large pot to tenderize but not fully cook.

Stuff the zucchini with your kids’ favorite mixture. Try pizza fixings, scrambled eggs, taco filling topped with cheese, or even fried rice. Be creative!

Place zucchini boats on cookie sheet and bake in a 350 degree F. oven until heated through and fully tender.

Make the meal even more fun by making “sails” for the boats out of lettuce leaves with thin celery sticks, carrot sticks, straws or toothpicks. Then shred some lettuce, cabbage or other greens and scatter them over the serving plate. Place the “boats” on top of the “waves.”
