Winter Squash

Squash with Apples

Use any winter squash for this recipe.

1 squash, cut in half, seeds removed
1 apple, cored and chopped
1 teaspoon lemon juice
1/4 cup brown sugar (or to taste)
1/2 teaspoon cinnamon
2 tablespoons butter

Preheat oven to 350 degrees F. Place squash, cut side down, in greased baking dish; bake 30 minutes. Combine apples, lemon juice, brown sugar and cinnamon. Turn squash and fill with the apple mixture. Add 1/4-inch water to the pan. Dot each squash half with butter and bake 20 minutes more.

Serves 2.
