From the "Kids' Corner" - Baked Spaghetti Squash Dinner

Posted by Carole Koch

1 spaghetti squash, cut in half lengthwise
1 pound extra lean hamburger
1 small onion, grated
Salt and pepper, to taste
1/2 cup grated cheddar cheese
1 cup canned tomato sauce
1/2 teaspoon dried basil, crumbled

Preheat oven to 350 degrees F. Meanwhile, boil halves of spaghetti squash cut-side down in 2 inches of water for 20 minutes or until just tender. Break hamburger into small pieces and partially fry with onion, salt and pepper. When cooked, remove inner shreds of squash from both halves and mix gently with hamburger, tomato sauce and basil. Return mixture to squash shells. Top with cheese; bake for 30 minutes.

Serves 2 to 4.
