Chuck Berglund’s Veggie Salad with Spaghetti Squash

Thanks to CSA members Bill Rush and Chuck Berglund for sharing this recipe. Bill says: “[Chuck] developed [this]...recipe over the last two weeks and it has really worked well, simply and quickly. We tried the spaghetti squash warm the first time. It did not work as well as when chilled.”

1 whole spaghetti squash

The following vegetables, coarsely chopped, in proportions that suit your palette:
2 sweet onions
3 cloves garlic (finely chopped)
2 sweet peppers
4 tomatoes
1 cucumber, peeled, seeded
1 small bunch fresh parsley
Fresh cilantro to taste, optional
1 head celeriac, optional
Olive oil, balsamic vinegar, salt and pepper to taste

Cut spaghetti squash lengthwise, clean out seeds, and place cut-side down in microwave-safe dish with 1/2-inch of water. Microwave on high power for 10 to 15 minutes, depending on size. Remove squash strands with a fork and place in bowl. Add chopped vegetables. Stir in olive oil, balsamic vinegar, salt and pepper to taste. Chill & Serve.
