Posted by Chris Buss

1 buttercup squash, halved and seeded
1 tablespoon soft butter
3 tablespoons brown sugar
1/4 cup of maple or Karo syrup or honey

Place squash cut side down in baking dish, adding ¼-inch of water. Bake at 400 degrees F. for 40-50 minutes or until tender. Scoop out and add butter and brown sugar to taste, then mash. Combine the butter, sugar, and syrup; drizzle over squash and bake for an additional 20 minutes at 350 degrees F.
