Autumn Minestrone
2 tablespoons canola oil
1 cup chopped onions
3 cloves garlic, minced
2 1/2 cups peeled, cubed delicata or butternut squash
1 cup diced carrots
2 cups cubed potatoes
1 teaspoon dried oregano
2 teaspoons salt
1/2 teaspoon black pepper
6 cups water
4 cups chopped kale
1 1/2 cups cooked white beans
Sauté onions and garlic in olive oil for 5 minutes. Add all ingredients except the kale and beans. Cook until potatoes are nearly tender, about 10 minutes. Add kale and beans, simmer until kale is tender and beans are hot.
