Recipes / Winter Squash

Asian Style Acorn Squash

1 acorn squash, halved, seeded and scraped to remove fibrous strings
3 tablespoons fresh lemon juice
2 tablespoons honey
1 tablespoons low-sodium soy sauce
1 tablespoon grated fresh ginger

Preheat oven to 400 degrees F. Place squash halves cut sides down in a baking dish with 1/2 inch of water. Bake for 30 minutes, or until tender. Remove from oven and turn cut sides up. Combine remaining ingredients in a bowl. Spoon into the squash cavities. Bake for 10 minutes more.

Serves 2.
