Kid-Friendly Chilled Watermelon Soup
1 watermelon, seeded, rind removed
1 cup apple juice
1 cup cranberry juice
1 cup low-fat plain yogurt
1/2 cup chopped fresh mint
Puree watermelon in food processor and transfer to large bowl. Add juices, mix with whisk until well incorporated.
Beat in yogurt and mint.
Chill and serve.
Serves 4.
