Chilled Watermelon with Honey
Combine 1/3 cup lemon juice, 2 tablespoons honey and a pinch of ground
ginger. Cut 1 small to medium watermelon into bite-sized chunks. Mix gently with the honey mixture.
Cover and refrigerate at least one hour before serving.
Serves 4.
