Turnip Quick Tip

Posted by Carole Koch

Cook 1/2 pound each of green beans and wedges of turnip in boiling water for 5 minutes; drain. Gently heat 1/8 cup olive oil, 1 tablespoon red wine vinegar and 1/4 teaspoon salt in a skillet. Add beans, turnips and 1/2 cup frozen peas. Toss until heated through and coated. Add 3 tablespoons of your favorite fresh herbs, season to taste, and serve!
