Turnip Patties

Peel and quarter turnips (however many you have). Steam until tender and then mash in a sieve. Allow to sit for at least 30 minutes to let excess water drain out. Transfer drained turnips to a bowl and season with salt and pepper.

Add enough beaten egg yolks to form a patty that holds together and is not too soft. Form palm-sized patties. Dredge patties in fine bread crumbs and then dip into beaten egg. Dredge a second time in the bread crumbs. Fry over medium high heat until golden brown. Turn patties over and brown the other side. Serve hot.
