Turnip & Leek Soup

2 turnips, cut in small chunks
2 small potatoes, cut in small chunks
2 leeks, white parts only
1 small clove garlic, minced
2 tablespoons chopped fresh parsley
1/4 teaspoon fresh thyme
2 teaspoons butter or olive oil
3/4 teaspoons salt
3 cups water
1/4 cup milk

Sauté the first 6 ingredients in the butter for 5 minutes. Add the water and salt and simmer for 30 minutes. Puree in blender or food processor, add the milk and reheat.

Serves 2.
