Trick-the-Kids Mashed Turnips

sharing this recipe! Lauren says: “Mashed turnips! What a great idea to incorporate a new vegetable in your child’s diet!”

Editor’s note: Adjust recipe to amount of turnips available.

5 white turnips, peeled and quartered
1/4 cup grated Swiss cheese
1/4 cup grated sharp cheddar cheese
1 tablespoon grated fresh Parmesan cheese
2 tablespoons butter
1 tablespoon fresh snipped chives
4 slices cooked bacon, chopped
Salt and pepper, to taste
Sour cream for garnish

Boil turnips in salted water for about 30 minutes. Drain off water. Mash turnips with potato masher or hand mixer. Stir in butter, cheese, chives, bacon, salt and pepper to taste. Serve with a dollop of sour cream on top.

Serves 1 or 2.
