Turnips
Fresh Vegetable Soup

Use your turnips in this fast and easy soup!
4 cups fat-free chicken broth
2 small turnips, diced
2 stalks celery, sliced
1 medium onion, chopped
¼ cup fresh parsley, chopped
2 medium carrots, thinly sliced
2 cups canned diced tomatoes
1 whole bay leaf
½ teaspoon dried oregano, to taste
Pinch of salt and pepper
Place all ingredients in a large saucepan. Bring to a boil. Cover, reduce heat and simmer 20 minutes until vegetables are tender. Skim off any froth that accumulates. Remove bay leaf before serving.
Serves 4.
