Crunchy Turnip Crumble

1 large or 2 medium turnips, cubed
2 tablespoons butter

1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon white pepper
Pinch of freshly grated nutmeg
2 medium eggs, well beaten

8 tablespoons breadcrumbs
2 tablespoons melted butter

Boil turnips. Drain and mash with 2 tablespoons butter.

Mix together the brown sugar, baking powder, salt, pepper and nutmeg. Add to mashed turnips. Add beaten eggs to turnips and mix well. Place turnip mixture in an oven-proof dish. Toss breadcrumbs with melted butter and then sprinkle on top of the turnip mixture.

Bake for 20 to 25 minutes in a 350 degree F. oven, until golden brown.

Serves 2.
