Braised Hakurei Turnips

This recipe uses exotic Asian flavors that go well with steamed or roasted fish. The mirin and white soy sauce can be found in most supermarkets and Asian grocery stores. Or adapt the braising technique and use your own flavorings. Remember to save the turnip greens to add to your greens recipes!

3 Hakurei turnips, tops removed
1 cups cold water
3/8 cup mirin
1/8 cup white soy sauce

Trim turnips and peel with a vegetable peeler. Cut the turnips into sixths and place them in a saucepan with the remaining ingredients. Cover and bring to a simmer over medium-low heat; cook very slowly for about 15 minutes, or until just tender. Let cool to room temperature in the braising liquid, then drain and serve hot.

Serves 2.
