Tomato Salsa with Peppers & Cilantro

Here’s a way to use your CSA tomatoes, cilantro, sweet peppers and hot peppers. If you don’t have this many tomatoes, just make less salsa, or use more sweet peppers.

1 small onion
1/2 green pepper
Small bunch cilantro
3 minced garlic cloves
Hot chili pepper, to taste
1 tablespoon honey
Salt to taste
1 3/4 pounds peeled, fresh tomatoes

Process all ingredients except tomatoes in a food processor until chopped as desired. Add tomatoes. Process again. Refrigerate for up to 1 week.

Makes about 2 cups.
