Tomato Salad with Goat Cheese

2 cups salad greens
2 large tomatoes (or equivalent)
4 ounces fresh goat cheese
Salt and pepper
1 tablespoons minced shallots (or sweet onions)
1/2 teaspoon mustard
1 tablespoons vinegar
3 tablespoons olive oil
2 tablespoons chopped parsley or basil

Place 1 cup of greens on each of 4 plates. Slice tomatoes and arrange on top of greens. Mix the dressing ingredients into an emulsion. Crumble the goat cheese over the tomato slices. Season with salt and pepper to taste. Pour the dressing on top. Add the chopped parsley or basil. Serve with hearty bread.
