Techniques for Cooking with Tomatoes

Many tomato recipes call for them to be peeled or seeded. Here’s how it’s done:

Peeling: For each tomato, cut out the core from the stem end, then cut a shallow X in the base. Bring a saucepan 3/4 full of water to a boil. Submerge the tomato for 20 to 30 seconds, then transfer it to a bowl of cold water. Use your fingertips to peel the tomato, starting at the X.

Seeding: Cut a tomato in half crosswise. Hold each half over a bowl and gently squeeze to force out the seeds.
