Oven-Baked Herbed Tomatoes

Try this simple method using any combination of your favorite fresh herbs.

3 large tomatoes or 6 medium tomatoes
1 cup loosely packed fresh basil leaves, chopped fine
1/2 cup fresh parsley, chopped fine
1/2 cup bread crumbs
1 tablespoon minced garlic
1 1/2 teaspoons olive oil
Salt and pepper, to taste

Place oven rack in center position and heat oven to 450 degrees F. Lightly spray a 9 x 13-inch baking dish with vegetable oil. While oven heats, combine herbs, bread crumbs and garlic in a small bowl. Set aside. Core tomatoes and slice in half vertically. Cut a thin slice from each side so tomatoes will lie flat. Arrange tomatoes, cut sides up, in a single layer on the prepared baking dish. Brush cut surfaces with olive oil. Season each tomato with salt and pepper. Evenly divide bread crumb mixture on top of tomatoes, patting it down to secure. Bake 10 to 15 minutes, or until tops are golden.

Serves 4 to 6.
