Green Tomato Hash

Although this recipe works best with firm green tomatoes, you could use your slightly pink tomatoes as well.

2 cups leftover chopped beef, pork or ham
1/2 cup diced green tomatoes
1 cup diced raw potatoes
1/4 cup chopped onion
2 tablespoons butter
Salt and pepper, to taste

Combine all ingredients; mix well. Turn into a buttered casserole and bake in a 325 degree F. oven for 1 hour.

Serves 4.
