Tomatoes
From the "Kids' Corner" - Tomatoes Stuffed with Ham & Cheese Pasta Salad
8 ounces elbow macaroni, cooked, drained and cooled
1/2 cup reduced-fat mayonnaise
1/8 cup Dijon mustard
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/2 pound deli ham, 1/2-inch-thick
1 cups coarsely chopped celery
1 cups shredded sharp Cheddar cheese
4 large, ripe tomatoes
Combine mayonnaise, mustard, onion powder and pepper in a bowl and whisk to blend well. Cut ham into bite-size cubes and add to the bowl. Add celery, cheese and the macaroni and stir gently to mix.
Core tomatoes. Cut each to look like a starburst: first cut in half (stem side facing the counter), but do not cut all the way through; then make another cut at right angles to the first cut, but not all the way through. Open tomatoes and place on serving plates. Fill with pasta salad.
Serves 4.
