Thanks to Illinois Benedictine University Dietetic Intern Sarah McNicholas for sharing this idea! Sarah says: “This is...a great...for kids because it allows them to be creative and enjoy a healthy, flavorful snack!”

1 tomato
1/4 cup shredded cheese
1/4 cup ground beef
1/4 cup lettuce
2 hard or soft taco shells

Have the kids create their own taco people by placing ingredients inside or around the taco shell in creative ways. Add eyes and mouths with miscellaneous food pieces, such as olives and parsley.
