Braised Tomatoes with Celery (and Eggplant, Leeks, Onion, Garlic &/or Bell Peppers!)

The recipe as written is intended for just celery and tomatoes, but CSA eggplant and/or peppers would be a nice addition (just use a bit more butter and seasoning for the additional veggies). Also try substituting fresh CSA onions or leeks for the onion salt. A clove of CSA garlic might be a yummy addition as well! If using any of these additional veggies, chop them into bite size pieces and cook them along with the celery. Do not add the tomatoes until all of the other veggies are nearly done. Experiment and enjoy!

2 tablespoons butter
2 cups celery, cut into 1-inch pieces
3/4 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon onion salt
2 cups peeled, quartered tomatoes

Melt butter in a saucepan. Add celery and seasonings. Simmer, covered, for 10 minutes or until celery is tender-crisp. Add tomatoes and cook, covered, for 5 minutes or until celery is tender and tomatoes are hot.

Serves 4.
