Pasta Salad with Swiss Chard, Kale or Spinach

This recipe was originally for spinach, but it works quite well with either the Swiss chard or kale in this week’s harvest. Thanks to contributing editor Lauren White for sharing the original spinach recipe. Lauren says: “I like to make this when I have left-over pasta or orzo. You can also use cannellini beans instead of pasta. If you have fresh parsley or other herbs available, they can be added
as well.”

About 4 cups cooked orzo or other pasta
About 2 cups fresh chopped chard, spinach, or kale (if using kale, slice into thin strips)
About 6 kalamata olives, pitted, diced
1/3 to 1/2 cup minced red onion
3/4 cup finely diced celery
1 teaspoon minced fresh garlic
Olive oil, balsamic vinegar, salt and pepper to taste
About 2 tablespoons crumbled feta cheese, optional, to garnish

Combine all ingredients, and season to taste with the oil, vinegar, salt and pepper. Sprinkle feta cheese over before serving.
