Summer Squash

Roasted Summer Squash with Thyme or Sage

summer squash (any variety), cut into 1-inch dice
olive oil
fresh sage or thyme, chopped
minced garlic or garlic scapes
salt and pepper

Heat oven to 350 degrees F. Toss squash with enough olive oil to lightly coat the vegetables. Add chopped herbs and garlic (or garlic scapes), to taste and toss again to combine. Season with salt and pepper, to taste. Place on baking sheet and roast until tender, 15-20 minutes.
