Patty Pan Mini Pizza

Thanks to CSA member Julie Verson for sharing this recipe. Julie says: “I think I cut the slices a bit too thick. Maybe four slices per squash would be better. Also, it would cook a little faster. My granddaughter enjoyed making them (we put on sliced black olives as faces with mushrooms for smiles). After a few bites though, she pulled all the toppings off. Oh well.”

1 patty pan squash
tomato, pesto or other pizza sauce
shredded cheese
other pizza toppings as desired, such as sliced olives, fresh herbs, garlic scapes, scallions, etc.

Slice the squash lengthwise. Top with desired sauce. Add other toppings, to taste. Top with shredded cheese. Broil for a few minutes, until the cheese melts.

Serves 1.
