Summer Squash
From the "Kids' Corner" - Summer Squash & Sweet Pepper Burritos

Dice some summer squash and sweet peppers. Sauté in olive oil with a little crushed garlic, and a sprinkle of cumin, oregano and salt. When veggies have softened a bit, add a can of pinto beans, and heat through. Wrap the veggie mixture and some grated cheese in your favorite soft tortillas. Serve salsa, sour cream, and/or guacamole on the side.
