From the "Kid's Corner" - Sesame-Marinated Veggies

Kids will love the great taste of this marinade on grilled summer squash.

1/8 cup sesame seeds
1/3 cup rice-wine vinegar
1/4 cup reduced sodium soy sauce
1/8 cup packed dark brown sugar
1 green onion, sliced
1 tablespoon sesame oil
1/2 teaspoon red pepper flakes
1 1/2 pounds veggies (like summer squash, eggplant, or bell peppers)

In a small skillet, toss sesame seeds over medium heat just until golden and fragrant, about 2 minutes. Immediately remove seeds from skillet to prevent burning; let cool.

In a small bowl, combine seeds and all remaining ingredients, except veggies. Cut veggies into thick slices for grilling. Place in a food storage bag; pour in marinade and seal. Refrigerate up to 1 hour, turning occasionally. Grill.

Serves 3.
