Basil-Patty Pan Squash

Posted by Carole Koch

Bring 1/4 cup chicken broth to a boil in a large skillet. Reduce heat to low. Add 1 pound chopped patty pan squash, 1 small chopped sweet onion, 1/4 cup butter, 1 tablespoon sugar, and 1 minced garlic clove. Cook, covered, 10 to 12 minutes or until squash is tender and liquid evaporates. Stir in 1/2 teaspoon Creole seasoning, salt and pepper to taste and 1 to 2 tablespoons chopped fresh basil.

Serves 6.
