Sugar Snap Peas with New Potatoes

If you haven’t eaten all of your sugar snap peas by the time you get home from your veggie pick-up, try tossing them in with some warm new potatoes and fresh herbs for a special side-dish.

Steam some small, unpeeled new potatoes (golf-ball size) until just tender, about 15 to 20 minutes.

In a large skillet or wok, melt some butter over low heat. Add steamed potatoes and sugar snap peas and sauté over medium heat until peas are cooked, about 2 minutes. Toss well. Garnish with chopped fresh chives and mint, to taste. Season with salt and freshly ground black pepper.
