Warm Spinach Salad with Blue Cheese
This combination is such a great idea!
Simply use what spinach you have on hand, add cheese to taste, and make your own lemon vinaigrette in the amount needed, using about 1 teaspoon lemon juice for each 1 tablespoon olive oil, and seasoning with salt and pepper.
Steam spinach until wilted. Press out any liquid and dress while still warm with a lemony vinaigrette. Crumble over it any blue cheese. Serve with good crusty brown bread, unsalted butter and red wine, if desired.
