Spinach Salad with Apple & Bacon

2/3 cup coarsely chopped thick bacon
1/4 cup vinaigrette
1/2 pound spinach, stems removed, washed, well dried, about 6 cups
1/2 Granny Smith apple, peeled, cored and coarsely chopped
8 walnut halves, coarsely chopped, optional

Fry bacon until crisp. Transfer to paper towels to drain. Tear spinach into bite-sized pieces and place in serving bowl. Add the apple, bacon and walnuts. Drizzle with vinaigrette and toss.

Serves 4.
