Spinach Fried Wild Rice

2 tablespoons butter
1/2 cup sliced shallots
4 1/2 cups cooked wild rice
1 teaspoon each: nutmeg, salt, pepper
3 cups packed spinach leaves, stems trimmed, coarsely chopped

Heat butter in large skillet over medium heat. Add shallots; cook until softened, about 3 minutes. Add wild rice, nutmeg, salt and pepper. Cook, stirring often, over high heat until hot, about 5 minutes. Stir spinach into rice and cook until just cooked through, about 1 to 1 1/2 minutes. Taste and adjust seasoning. Serve hot.

Serves 4
