Spinach & Cucumber Sauté

This side dish is excellent with fish or chicken.

1 large cucumber
2 teaspoons butter
4 cups lightly packed fresh spinach
1/8 teaspoon salt
Black pepper, to taste

Peel cucumber and cut in half lengthwise. Scoop out seeds and slice crosswise into 1/4-inch pieces. Melt the butter in a heavy nonstick skillet over medium heat. Add the cucumbers and cook, stirring often, for 2 minutes. Add the spinach and seasonings. Cook, stirring occasionally, for 2 minutes, or until spinach is wilted. Serve immediately.
