Sesame & Soy Spinach

4 cups lightly packed spinach leaves
1 teaspoon sesame seeds
1 1/2 teaspoons low-sodium soy sauce

Pan toast sesame seeds in a heavy skillet over medium heat, shaking skillet constantly, until seeds begin to color, about 2 minutes. Add spinach with only the water that clings after washing. Cover and cook for 1 to 2 minutes, or until leaves are barely wilted. Flip spinach with tongs during cooking to be sure it cooks evenly. Sprinkle with the soy sauce and serve.
