From "The Kids' Corner" - Who Likes Spinach?

Clarence Darrow once said: “I don’t like spinach, and I’m glad I don’t, because if I liked it I’d eat it, and I just hate it.” If that describes your kids’ attitudes, how do you get this wonderfully nutritious vegetable to pass their lips? The best way is to add small amounts of spinach to other dishes; ones in which the spinach will not be particularly visible. Try some of these:

Mix it into any type of burger.

Add it to tomato-based pasta sauces, as you would basil or oregano.

Add to meatloaves.

Sneak a few leaves into mixed greens salads.

Mix with (or use instead of) lettuce for sandwiches or tacos.

Add to soups or casseroles.

Use on pizza...on top of the sauce, but under the cheese.

Try recipes that add sweetness to the spinach with raisins or fresh fruit.
