From the "Kids' Corner" - Fresh Spinach Dip
12 ounces fresh spinach, cleaned, steamed and immediately rinsed with cold water and chopped
1 8-ounce container low-fat cottage cheese
1/2 clove garlic, minced
Salt and pepper, to taste
Mix cottage cheese, garlic, salt and pepper in a bowl. Add spinach and mix well. Chill until ready to serve.
Makes about 1 1/2 cups.
