Basic Sautéed Spinach
2 teaspoons unsalted butter or extra-virgin olive oil
1 pound fresh spinach, stemmed and washed
Salt and freshly ground black pepper
Place butter or oil in a sauté pan over medium heat. Add spinach. Stir. Cover and cook 1 minute. Do not overcook. Add salt and pepper, to taste. Serve immediately.
Serves 3.
