Roasted Rutabaga & Onion
1/2 rutabaga, peeled, cut into 1/2-inch pieces
2 onions, peeled, cut into wedges
2 tablespoons butter
Salt, to taste
Freshly ground black pepper, to taste
2 cups apple, juice
Preheat the oven to 400 degrees F.
Arrange the rutabaga and onions in a roasting pan and dot with butter.
Sprinkle with salt and pepper and add the apple juice to the pan. Bake for 25 to 30 minutes, stirring occasionally, until tender and starting to brown.
Serves 4.
