Rutabaga

Roasted Honeyed Rutabaga

1 large rutabaga
3 tablespoons butter (or safflower oil)
3 tablespoons honey

Preheat the oven to 400 degrees F.

Peel and cut the rutabaga into 3/4-inch pieces. Melt the butter with the honey in a medium saucepan, or microwave in a medium-large bowl.

Toss the rutabaga with the butter and honey mixture in the same pan, then arrange in one layer in a large jelly roll pan. Bake for 15 minutes and then stir with a long wooden spoon. Return to oven, and continue baking until golden brown and tender.

Serves 4.
