Rutabaga

From the "Kids' Corner" - Rutabaga Combos

Posted by Carole Koch

Kids often like rutabagas best when mixed with other vegetables. Try one of these combinations:

Mashed Rutabaga, Carrots & Potatoes

Cook equal amounts of chunked rutabaga, carrots and potatoes. Combine together and mash, adding a bit of butter and milk or cream. Season with salt and pepper.

Saucy Rutabaga/Potato Combo

1 1/2 cup cubed rutabaga
1 1/2 cups cubed potato
1/4 cup soft-style cream cheese with chives and onion
1/4 cup milk
1/4 teaspoon salt
2 tablespoons snipped parsley

Cook rutabaga and potato in boiling water for 20 minutes or until tender. Drain; remove vegetables from pan. In the same pan, combine cream cheese, milk and salt. Heat and stir until smooth. Add vegetables and parsley to sauce and toss.

Serves 4.
