Radish & Egg Salad

If you have red radishes starting to pile up in your crisper, try this delicious twist on egg salad. It’s also a great way to use up any remaining dill weed. Adjust the ingredients, if necessary, based on how many radishes you have. This is great served with a heavy dark bread.

1 pound red radishes, cleaned, trimmed, and sliced
3 hard boiled eggs, peeled and coarsely chopped
1/2 cup sour cream 1 bunch scallions, trimmed and chopped
Salt and pepper, to taste
2 sprigs fresh dill, chopped

Mix together all the ingredients, except the dill, and place in a serving bowl. Garnish with the dill.
