Radish Confetti Salad
4 radishes, shredded
1 medium carrot, shredded
1 stalk celery, cut into matchsticks
6 to 8 chives, cut into 1-inch pieces
1/4 cup sweet rice vinegar
1/4 cup olive oil
1/2 teaspoon celery seed
Salt and pepper, to taste
Toss vegetables together. Whisk together vinegar, oil, and seasonings. Pour dressing over vegetables and toss. Serve over lettuce leaves.
