Easy Radish Greens Soup

1/2 tablespoon butter
1 1/2 teaspoons olive oil
1 medium potato, coarsely chopped
1/2 medium onion, coarsely chopped
2 cups chicken broth (or water)
1 bunch radish greens
Zest and juice of 1/2 lemon
Salt and pepper, to taste

Heat butter and oil in a medium saucepan over medium-high heat. Add onion and potatoes; cook for 5 minutes. Add broth (or water), the radish greens and 1/2 teaspoon salt. Cook until potatoes are soft and greens are wilted, about 10 minutes. Stir in lemon juice and lemon zest. Puree mixture in a blender. Add salt and pepper, to taste. Serve hot or cold. Garnish with a few thin slices of radish.

Serves 2.
